
CHIANTI DOCG "TERRE DI CHIESINA"
Blend:
85% Sangiovese,
15%.quantity of authoctonous grapes (Canaiolo Nero, Ciliegiolo and Colorino), following the disciplinary regulations
Vinification:
The grapes are handpicked and,
after de-stemming, fermented in cement vats for a period of 7-10 days.
Once fermentation is concluded, it is macerated along with the skins
for another week to improve the complexity of the wine, soaking the
“cap” of skins daily. After drawing off the wine (separating the skins
from the liquid) around 2 weeks after picking, the wine is kept in
cement vats in order to promote good malolactic fermentation.
Aging:
The wine is aged for 18 months in cement
vats for the micro-oxygenation of the wine, and indispensable for the
complex aroma and taste of red wine. After bottling, the wine is aged
for another 6 months before being put on the market.
Organoleptic characteristics:
“TERRE DI CHIESINA” is ruby-coloured, with garnet reflection and a
beautiful clarity. A fresh balsamic nose, with strong notes of fruit,
brandied cherry, mulberry and cassis, supported by herbal, floral and
slightly ferrous nuances over a spicy undertone. In the mouth, good
acidity lightens its profile and draws out the finish, as spicy bursts
emerge.
Pairing:
Excellent with grilled and roaste meats, game, and medium- and well- aged cheese.
